Swiss Chard Spring Roll Video

Join Intern, Liz, as she instructs how to make some refreshing summer spring rolls with foods harvested from the garden.

 

This healthy and fresh recipe is a great way to utilize swiss chard leaves in a fun way. In this recipe I use carrots, radishes , cucumber, avocado, and cilantro but almost any veggies you have can work. The key is to have a balance of soft  and crunchy textures. Cabbage, microgreens, basil, and mint are some of my other favorite ingredients. 

Makes 8-10 servings

 

Ingredients

  • Spring rolls:

  • 8-10 swiss chard leaves

  • Two large carrots

  • I cucumber

  • 3-4 radishes

  • 1 avocado 

  • Chopped Cilantro

 

Dipping Sauce:

  • ⅓ Cup Peanut Butter

  • ¾ Cup Coconut Milk (or any milk of your choice)

  • Two tablespoons Sriracha or ½ Tablespoon Red Curry Paste

  • 1 Tablespoon Soy Sauce

  • ¼ Cup Brown Sugar

  • Water

 

Spring rolls:

  1. First thoroughly wash all the produce. Next chop the radishes into thin slices, julienne the carrots, cut cucumbers into small pieces or thin sticks, and slice avocado.

  2. Cut the stems off the chard leaves. If any of the leaves are biggers and have tougher stems, cut the stem a little bit into the leaf. (Save the stems! They are great when roasted or sauteed especially in soup!)

  3. To assemble the spring rolls place your ingredients at one end of the chard leaf. I used two to three small pieces of each ingredient. Make sure not to overfill the spring rolls as the leaves especially if they are younger/ more tender rip easily. 

  4. Next grab the top part of the leaf and tightly roll the vegetables. When you've rolled so all the ingredients are covered by the leaf slightly fold in the sides of the chard leaf and roll the rest of the way. Then use a toothpick to secure your spring rolls. This is not entirely necessary but helps make eating them a little less messy.

Spicy Peanut Dipping Sauce:

  1. Add coconut milk to a saucepan over medium heat. Then add sriracha or curry paste and soy sauce. Stir. 

  2. Add brown sugar, and peanut butter. Stir until peanut butter and sugar are dissolved. Allow sauce to cook for 3-5 minutes.

  3. Add water to thin to desired consistency and then it is ready to serve!
